Language follows your work.
Dictation starts with the language of your Windows keyboard layout unless you choose a language explicitly. A translation target is independent: you can speak in one language and write in another.
Reading uses the selected text to choose its speech language. Reader translation is an explicit choice when you want to hear it in another language.
Support is a starting point.
Recognition and translation accuracy varies by language, accent, microphone and source material. The directory records supported app entries, not a claim that every language has been benchmarked equally.

No. The directory lists the supported entries, including regional variants. Nima does not claim support for every language or dialect.
Does my country restrict the language I can choose?
No. The demonstration suggests a language using browser preferences and time-zone hints, but you can choose another example. In the app, language settings control dictation and translation.
